fats, I know Manuka honey is far superior than the normal range of honey in terms of its incredical healing abilities (sound incredible hor? :p). Did a search & got this from http://www.manukahoneyproducts.com/:

Why is Manuka Honey Special?

1. Manuka Honey has an antibacterial activity, due primarily to hydrogen peroxide formed in a "slow-release" manner by the enzyme glucose oxidase present. Some honeys are no more antibacterial than sugar, while others can be diluted more than 100-fold and still halt the growth of bacteria. The difference in potency of antibacterial activity found among the different honeys is more than 100-fold.

2. Manuka Honey is the only honey available that is tested for its antibacterial activity. It contains an additional antibacterial component found only in honey produced from Leptospermum plants: what has been called the "Unique Manuka Factor" (UMF). There is evidence that the two antibacterial components may have a synergistic action.

3. UMF is not affected by the catalase enzyme present in body tissue and serum. This enzyme will break down, to some degree, the hydrogen peroxide which is the major antibacterial factor found in other types of honey. If a honey without UMF were used to treat an infection, the potency of the honey's antibacterial activity would most likely be reduced because of the action of catalase.

4. The enzyme that produces hydrogen peroxide in honey is destroyed when honey is exposed to heat and light. But UMF is stable, so there is no concern about Manuka Honey losing its activity in storage.

5. The enzyme that produces hydrogen peroxide in honey becomes active only when honey is diluted. But UMF is active in full strength honey, which will provide a more potent antibacterial action diffusing into the depth of infected tissues.

6. The enzyme that produces hydrogen peroxide in honey needs oxygen to be available for the reaction, so it may not work under wound dressings or in wound cavities. Honey with UMF is active in all situations.

7. The enzyme that produces hydrogen peroxide in honey becomes active only when the acidity of honey is neutralised by body fluids, but then the honey is diluted.

8. The enzyme that produces hydrogen peroxide in honey could be destroyed by the protein-digesting enzymes that are in wound fluids.

9. The UMF antibacterial activity diffuses deeper into skin tissues than does the hydrogen peroxide from other types of honey.

10. Honey with UMF is more effective than that with hydrogen peroxide against some types of bacteria. For example, active manuka honey with UMF is about twice as effective as other honey against Eschericihia coli and Staphylococcus aureus, the most common causes of infected wounds.

fats, based on my layman knowledge. the higher the UMF the better. usu the cheaper manuka honey is abt 5+, 10+. so 20+ is good.

although there are health benefits, it's not worth the price IMO. they just hype it up to make you pay more for it.

Manuka honey is so diff from normal honey... it tastes different, and I don't really like it. I wouldn't pay so much money for it, because it never helped with my sore throats! lol.
If only I had you..

I'm a fan of manuka honey for more than 3 years. Before I took manuka honey, I could easily get throat infectious easily, especially you can see ulers on the walls of the throat if I opened my mouth. After taking it, so far never have seen a doc after consuming a teaspoonful daily. If you have cuts, it will heal faster. I had tried many brands and different UMF; from 10 UMF, 15 up to 20 UMF. The higher the UMF, the stronger the smell and the thickness of manuka is and more geniuine. Of cos, price will increase as UMF is higher. Actually for my case, my family is taking 15 UMF now. I prefer manuka honey than normal honey because it is not that sweet. Raw honey is good too but if a person gets heatiness easily, it is adivisable not to. Raw honey has a light fragrance when dilute to water and few drops of fresh lemon. It's totally different from honey lemon that already in can. Try it!
