Banana Bran Muffins

Ingredients: (Conversion Chart)

  • 2½ cups flour
  • ¾ cup sugar
  • 1½ teaspoons baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • 1½ cups buttermilk
  • 1½ cups bran
  • 1 cup mashed, ripe bananas

Directions:

  1. Preheat oven to 350°F. Coat two 12-cup muffin pans with non-stick spray.
  2. Sift flour, sugar, baking soda and salt together.
  3. Whisk eggs, buttermilk and bran together. Let stand for 10 minutes.
  4. Make a well in center of the dry ingredients and add egg mixture all at once. Stir with a wooden spoon until dry ingredients are just moistened.
  5. Lightly fold in mashed banana. Fill tins two-thirds full.
  6. Bake in prepared muffin tins for about 25 minutes, until a tester poked in the center comes out clean.
