  • 1 cup eggplant, diced
  • 1 cup fresh mushrooms, diced
  • 1˝ cups fresh tomatoes, chopped
  • 1˝ ounces low-fat mozzarella cheese

Directions:

  1. In a non-stick skillet, sauté eggplant, mushrooms, and tomatoes until tender. Drain off extra juice.
  2. Add mozzarella cheese and let melt over top.
