Black-Eyed Peas and Vegetable Salad

Ingredients: (Conversion Chart)

  • 1 onion, quartered
  • 1 medium green bell pepper, cored and seeded
  • 1 medium red bell pepper, cored and seeded
  • 1 clove garlic
  • 2 cups canned black-eyed peas, rinsed and drained
  • ¼ cup olive oil
  • 3 tablespoons white vinegar
  • salt
  • freshly ground black pepper

Directions:

  1. In food processor, add onion, green and red bell peppers, and garlic, and blend mixture to a fine mince, but not a paste.
  2. In a large bowl, toss black-eyed peas and minced vegetables. Add oil and vinegar, and season with salt and pepper to taste. Toss well to combine.
