Fat-Free Chocolate Cookies

Ingredients: (Conversion Chart)

  • cup unsweetened cocoa powder
  • 1/8 teaspoon salt
  • cup sugar, divided
  • 3 large egg whites
  • 1/8 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 tablespoon confectioners' sugar

Directions:

  1. Preheat oven to 300F. Line two baking sheets with foil.
  2. Meanwhile, in a small bowl, sift together cocoa, salt, and cup sugar. Set aside.
  3. In a large bowl, beat egg whites and cream of tartar with electric mixer at medium-low speed, until soft peaks form. Beat in remaining cup sugar, teaspoonful at a time, until meringue is glossy and stiff peaks form. Fold in cocoa mixture and vanilla extract.
  4. Drop by rounded teaspoonfuls about 1-inch apart onto baking sheets. Bake 25 minutes for soft, chewy cookies, or 40 minutes for crisp cookies. Let cool before dusting cookies with confectioners' sugar.
