Herbed Pork Roast

Ingredients: (Conversion Chart)

  • 1 pound pork tenderloin, trimmed
  • 1 teaspoon olive oil
  • 1/8 teaspoon ground red pepper
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt
  • ¼ cup chopped flat-leaf parsley leaves
  • 2 tablespoons chopped fresh rosemary leaves

Directions:

  1. Preheat oven to 450°F.
  2. Rub pork with oil and sprinkle with red pepper, black pepper, garlic powder, and salt. Press parsley and rosemary evenly over roast so they stick.
  3. Transfer pork to a small roasting pan, and roast in preheated oven for 20 minutes, or until barely pink inside. Let cool 10 minutes before slicing.
