Pancakes with Orange Marmalade

  • cup 1% milk
  • 1/3 cup low-fat pancake mix
  • 2 tablespoons liquid egg substitute
  • 1 tablespoon orange juice concentrate
  • 2 tablespoons marmalade
  • 1/3 cup low-fat plain yogurt


  1. In a medium bowl, combine milk, pancake mix, egg substitute, and juice concentrate.
  2. Heat griddle coated with cooking spray.
  3. Pour two circles of batter onto griddle and cook until bubbles begin to pop. Flip and cook until done, about 2 minutes. Transfer pancakes to plate and top with marmalade and yogurt.
