Chocolate Orange Cake

Ingredients: (Conversion Chart)

    Cake:
  • 3½ ounces self-raising flour
  • 3½ ounces cocoa powder
  • 6 ounces caster sugar
  • 1 teaspoon baking powder
  • Zest and juice of 1 orange
  • 4 tablespoons vegetable oil
  • 2 tablespoons low-fat plain yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract


  • Filling:
  • 3 oranges, cut into segments, seeded, skin and pith removed
  • 3½ ounces half-fat crème fraîche


  • Topping:
  • 3½ ounces bittersweet chocolate
  • 3½ ounces half-fat crème fraîche

Directions:

  1. Preheat oven to 300°F.
  2. In a bowl, sift together the flour, cocoa powder, sugar, and baking powder.
  3. Separate the egg yolks and whites. In a bowl, add the yolks, zest, orange juice, oil, yogurt, and vanilla, and beat together. In another bowl, beat the egg whites until peaks form.
  4. Blend together the flour mixture and orange mixture. Fold in the egg whites and divide batter among two greased 8-inch cake tins. Bake in preheated oven for 25 minutes. Remove from oven and let cool.
  5. Meanwhile, for the topping, melt chocolate in a bowl placed over simmering water. Remove from heat and stir in the half-fat creme fraiche.
  6. Spread creme fraiche and arrange orange segments, reserving a few segments, over top of one cake. Top with the other cake, spreading the chocolate mix on top, and decorate with reserved orange segments.
