Vietnamese Jackfruit Salad

- 4 ounces lime juice
- 4 chilli padi
- 1 tablespoon Asian fish sauce
- 2 tablespoons sugar
- ½ teaspoon sesame oil
- 17 ounces jackfruit, seeded and cut into ½-inch thick strips
- 3½ ounces shallots, sliced thinly
- 2 tablespoons chopped mint leaves
- 1 tablespoon pan-toasted sesame seeds
- 1 tablespoon toasted and coarsely chopped peanuts
Directions:
- Blend lime juice, chilli padi, fish sauce and sugar with sesame oil. Set aside.
- Place jackfruit strips, shallots, coriander and mint leaves in a bowl. Pour the blended dressing over and toss well.
- Serve with toasted sesame seeds and peanuts sprinkled over the salad.
