Black-Eyed Peas and Vegetable Salad

- 1 onion, quartered
- 1 medium green bell pepper, cored and seeded
- 1 medium red bell pepper, cored and seeded
- 1 clove garlic
- 2 cups canned black-eyed peas, rinsed and drained
- ¼ cup olive oil
- 3 tablespoons white vinegar
- salt
- freshly ground black pepper
Directions:
- In food processor, add onion, green and red bell peppers, and garlic, and blend mixture to a fine mince, but not a paste.
- In a large bowl, toss black-eyed peas and minced vegetables. Add oil and vinegar, and season with salt and pepper to taste. Toss well to combine.
