Avocado, Orange and Spinach Salad

Ingredients: (Conversion Chart)

  • ¼ cup extra-virgin olive oil
  • 6 tablespoons freshly squeezed lime juice
  • salt
  • ground pepper
  • 2 medium ripe avocados, pitted, peeled and sliced
  • 2 small navel oranges, peeled, pithed and sliced
  • 4 cups baby spinach leaves, coarsely chopped
  • 1 small red onion, thinly sliced
  • ½ cup toasted pumpkin seeds

Directions:

  1. In a large salad bowl, combine olive oil and lime juice, and season with salt and pepper to taste.
  2. Add avocado, orange, spinach, onion, and pumpkin seeds, and toss to dress.
