Crab and Avocado Salad

Ingredients: (Conversion Chart)

  • 2 tablespoons freshly squeezed orange juice
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • ½ teaspoon salt
  • ¼ teaspoon dry mustard
  • ¼ teaspoon freshly ground black pepper
  • 2 heads butterhead lettuce, separated into leaves
  • 2 cups sliced sweet onion
  • 2 medium avocados, peeled, pitted, and sliced
  • 2 cups lump crabmeat
  • 1 tablespoon chopped toasted skinless hazelnuts

Directions:

  1. In a medium bowl, whisk together orange juice, oil, vinegar, salt, mustard, and pepper. Set aside.
  2. In a large bowl, combine lettuce and onions. Toss with dressing and divide among 4 plates. Top each with avocado, crabmeat and hazelnuts.
