Marinated Seafood Salad

- ¾ pound fresh skinless salmon fillet, pin bones removed
- ½ pound cooked small shrimp, peeled and deveined
- ½ cup fresh lemon juice
- ½ cup fresh lime juice
- ¼ cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- ½ cup diced red onion
- ¼ cup extra-virgin olive oil
- 4 cups torn frisée
- ½ cup cilantro leaves
- 1 avocado, peeled and diced
- 1 medium ripe mango, peeled, pitted and diced
Directions:
- In a large bowl, add salmon, shrimp, lemon juice, lime juice, vinegar, sugar, salt, and onion. Toss to combine. Cover and marinate overnight in a refrigerator.
- Drain seafood, reserving 4 tablespoons of the marinade. Whisk together reserved marinade and oil in a large bowl. Add frisée, cilantro, avocado, and mango, and toss to combine. Divide salad among 4 plates and top with seafood.
