Roasted Sweet Potato and Bacon Salad

- 4 pounds sweet potatoes, peeled and cut into 1-inch cubes
- 3 slices bacon, cut crosswise into ½-inch pieces
- 3 large onions, sliced
- 2 cloves garlic, crushed
- 4 tablespoons olive oil, divided
- 1 teaspoon salt, divided
- 1 teaspoon ground pepper, divided
- 1/3 cup fresh lime juice
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, seeded and diced
- ½ cup chopped fresh basil
Directions:
- Preheat oven to 425°F.
- In a large roasting pan, add potatoes, bacon, onions, garlic, 1 tablespoon oil, ½ teaspoon salt and ½ teaspoon pepper. Toss to coat evenly. Roast in preheated oven, stirring occasionally, until potatoes are tender and lightly brown, and bacon pieces are crisp, about 40 minutes. Remove from oven and let cool.
- Meanwhile, in a large bowl, whisk remaining 3 tablespoons oil, ½ teaspoon salt, ½ teaspoon pepper, and lime juice until combined. Add potato mixture, tomatoes, bell pepper, and basil, and toss until evenly dressed.
