Herbed Pork Roast
- 1 pound pork tenderloin, trimmed
- 1 teaspoon olive oil
- 1/8 teaspoon ground red pepper
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic powder
- 1/8 teaspoon salt
- ¼ cup chopped flat-leaf parsley leaves
- 2 tablespoons chopped fresh rosemary leaves
Directions:
- Preheat oven to 450°F.
- Rub pork with oil and sprinkle with red pepper, black pepper, garlic powder, and salt. Press parsley and rosemary evenly over roast so they stick.
- Transfer pork to a small roasting pan, and roast in preheated oven for 20 minutes, or until barely pink inside. Let cool 10 minutes before slicing.
