Chocolate Orange Cake
Cake:
- 3½ ounces self-raising flour
- 3½ ounces cocoa powder
- 6 ounces caster sugar
- 1 teaspoon baking powder
- Zest and juice of 1 orange
- 4 tablespoons vegetable oil
- 2 tablespoons low-fat plain yogurt
- 2 eggs
- 1 teaspoon vanilla extract
Filling:
- 3 oranges, cut into segments, seeded, skin and pith removed
- 3½ ounces half-fat crème fraîche
Topping:
- 3½ ounces bittersweet chocolate
- 3½ ounces half-fat crème fraîche
Directions:
- Preheat oven to 300°F.
- In a bowl, sift together the flour, cocoa powder, sugar, and baking powder.
- Separate the egg yolks and whites. In a bowl, add the yolks, zest, orange juice, oil, yogurt, and vanilla, and beat together. In another bowl, beat the egg whites until peaks form.
- Blend together the flour mixture and orange mixture. Fold in the egg whites and divide batter among two greased 8-inch cake tins. Bake in preheated oven for 25 minutes. Remove from oven and let cool.
- Meanwhile, for the topping, melt chocolate in a bowl placed over simmering water. Remove from heat and stir in the half-fat creme fraiche.
- Spread creme fraiche and arrange orange segments, reserving a few segments, over top of one cake. Top with the other cake, spreading the chocolate mix on top, and decorate with reserved orange segments.
